Quick “coffee” cake
This is a cake recipe that I remember my Nan making, recently my mum gave it to me; it came from an old “Good House Keeping” cook book. The original had walnuts in the topping. I have also added some brown sugar into the mix to give a deeper flavor and some extra spices, but it’s seriously delicious how ever you choose to make it.

Cake
1 cup – plain flour
1/2 cup – Sugar (White and brown 50/50)
1 1/2 Teaspoons – baking powder
1 tablespoon – mixed spice (add to taste)
1/2 Teaspoon – Salt
60g – Butter
1 beaten egg
1/2 Cup – Milk
Splash of vanilla to taste.
Topping
1/3 Cup – Sugar
1 tablespoon – melted butter
1 teaspoon – mixed spice
Makes a 7 inch / 18cm cake

Method:
Mix flour, sugar, baking powder, spices and salt together, and rub into the butter.
add in the beaten eggs and milk – mix only enough to moisten the flour.
DO NOT BEAT. The batter should be slightly lumpy.
Topping – Combine all ingredients.
Sprinkle with topping, and bake in 190 C oven for about 30mins
My mixed spice preference is Cinnamon, ginger and nutmeg.
